This Thanksgiving, treat your guests to a melt-in-your-mouth Herb-Crusted Prime Rib made with locally raised, high-quality beef from LB Specialty Beef. Rich, tender, and full of flavor, prime rib is the kind of centerpiece that brings everyone to the table a little faster.

Prime rib is the ultimate special-occasion cut. It’s beautifully marbled, impressively elegant, and incredibly simple to prepare—especially when you’re starting with our ranch-raised beef. Whether you're gathering a cozy group or hosting a full house, this roast delivers big flavor with minimal fuss.


Herb-Crusted Prime Rib Recipe


Ingredients:

  • 1 (4–6 lb) LB Specialty Beef prime rib roast

  • 4 cloves garlic, minced

  • 2 tbsp fresh rosemary, chopped

  • 2 tbsp fresh thyme, chopped

  • 2 tbsp Kosher salt

  • 1 tbsp black pepper

  • 3 tbsp olive oil

  • Optional: 1 tbsp Dijon mustard for added crust


Instructions:

  1. Bring to Room Temperature: Pull your roast from the fridge 1–2 hours before cooking. This ensures even roasting and a perfect center.

  2. Preheat & Prep: Preheat your oven to 450°F. In a small bowl, mix garlic, rosemary, thyme, salt, pepper, and olive oil (and Dijon if using).

  3. Season Generously: Pat the roast dry and rub the herb mixture all over, pressing it into the meat.

  4. Sear in the Oven: Place the roast bone-side down in a roasting pan. Cook at 450°F for 20 minutes to form a beautiful crust.

  5. Slow Roast: Reduce heat to 325°F and continue cooking for 13–15 minutes per pound, or until your preferred internal temp:

    • 120–125°F rare

    • 130–135°F medium rare (most recommended)

    • 140–145°F medium

  6. Rest Before Slicing: Remove from the oven and tent loosely with foil. Let rest 20–30 minutes. This step is crucial—juices redistribute and the roast becomes exceptionally tender.

  7. Serve & Enjoy: Slice thick, add some au jus or horseradish cream, and watch it disappear.
