At LB Specialty Beef, fall is one of our favorite seasons—not just because it’s harvest time, but because it’s the perfect excuse to slow down and enjoy the rich, comforting flavors that high-quality beef brings to the table.
This Slow-Cooked Beef & Root Vegetable Stew is a seasonal staple in our kitchen. It’s rustic, nourishing, and easy to make—ideal for a Sunday supper or a make-ahead meal to reheat throughout the week.
Slow-Cooked Beef & Root Vegetable Stew
🥩 Ingredients
2 lbs LB Specialty Beef chuck roast or stew meat, cut into 1½-inch cubes
2 Tbsp olive oil or beef tallow
1 large onion, chopped
3 cloves garlic, minced
4 carrots, peeled and cut into chunks
3 parsnips or turnips, peeled and cut into chunks
2 medium potatoes, diced
2 cups beef broth
1 cup dry red wine (optional but recommended)
2 Tbsp tomato paste
1 tsp fresh thyme (or ½ tsp dried)
1 tsp rosemary
2 bay leaves
Salt & freshly cracked pepper to taste
👩🍳 Instructions
Brown the beef: In a large Dutch oven or skillet, heat olive oil over medium-high. Add beef in batches, searing until browned on all sides. Remove and set aside.
Sauté the aromatics: In the same pan, add onion and garlic, cooking until fragrant and translucent.
Build the base: Stir in tomato paste, then deglaze the pan with wine (or a splash of broth), scraping up all those flavorful brown bits.
Combine and simmer: Return the beef to the pot along with the carrots, parsnips, potatoes, herbs, and broth. Bring to a simmer, cover, and reduce heat to low. Cook for 2½–3 hours, stirring occasionally, until the beef is fork-tender.
Season and serve: Remove bay leaves, season to taste, and serve with a slice of crusty bread or over creamy mashed potatoes.
